Pumpkin Cookies

Pumpkins are a bright orange color, because they are loaded with beta-carotene. They are low in calories, high in fiber, and have no cholesterol. Pumpkins contain lutein and ziazanthin, which keep your eyes healthy. Pumpkin is also a good source of vitamin C, vitamin A, and potassium.

Small pumpkins are better for eating, while the large ones are better for Jack-o-Lanterns.
